Nippon Dinner
The first stop on our gastronomic journey is Hoshino Resorts’ HOSHINOYA Tokyo. Chef Noriyuki Hamada’s new Nippon dinner concept focuses on a single key ingredient – fish – a staple of cooking at ryokans. Hamada prepares the dishes in ways inspired by the very lives of the ingredients. Fish that use seaweed and rocks to hide from prey are prepared draped with seaweed, and is plated “hiding” at the edge of the plate. Mushrooms are steamed with fall leaves picked in the same area. The Nippon series is beginning this month and will evolve through the seasons.

The contemporary Parisian-bistro-meets-New-York is collaborating with Billy Durney of Hometown Bar-B-Que, Red Hook’s beacon of southern-style barbecue, to create an inspired series highlighting different cuts of meat with both French and American preparations.
